- Split the fire box and smoke chamber

- Added pipes for Stoker

- hieghtened the firebox trays

The goal was to be able to cook on 2/3 rds of the smoker at one time and cook at different temps and to go for a longer burn time.



Results - success, I can cook on the larger side and use half the fuel, I am burning 50/50 wood and charcoal and will probably stick with 75/25 wood / charcoal.  I can cook on just one side and go 3-4 hours on a burn,  ...</description>

Options: all (went with grill adder and steamer.  No water/grill pans).

Mods: Drop down gate for carraige under smoker.  Hanging hooks under serving shelf.  Replaced jack plate with Steel wheel.  More mods to come.



Most food cooked at once: 155 pounds of tri-tip.

I also made some of my beans that turned out better than ever cause I put them under a brisket during the last few hours. I also did a breakfast fatty. I was hoping to have it sooner but the post office lost my deposit check for 3 weeks and then work is getting in the way.  I got most of the options.  Extra racks, both wood boxes, I got the tailgate on the lower one, dual burners and the door for the grill adder (I didn't want the pans yet) and chrome.  Thanks for starting the forum.

			<description>This past weekend, I catered (cooked) for a friends fundraiser event.  What was supposed to be 100 people, turned into 200.  This is what I cooked and how I went about it:



90 lbs of Tri-tip (36 roasts).

210 Chicken Thighs.

100 sausages.



I started the FAT 50 up at 11:00

11:30 loaded the Tri-tips on the right side of the unit (upper and lower racks full).

1:30 loaded the left side with chicken (roughly 175 pieces).

2:30 unloaded Tri-tips into Cambro that were in the 145-degree  ...</description>

			<description>Having smoked foods on various woods and coals, I have settled on straight apple wood for my FAT 50.  Have had no complaints yet.  



I have thought about using some lump or charcoal as a base, but then I thought to myself 'that's just one more thing you have to worry about.



I'm not saying Apple is the best.  But I definitely will not use mesquite and I have a distributor just a couple of miles away. </description>

			<description>I had a door on one side of my firebox jam everytime I lit it up.  It seemed to just not want to close, unless I got real aggressive with it.  It wouldn't close with ease again until it cooled down.



Anyhow, it was pointed out to me that the hinge on the door was not aligned correctly and a little loose.  I had a friend (master welder) fix it and what he did was removed the door all together, firmed up and realigned the hinge and presto the door opened and closed better than the other side.  ...</description>

			<description><![CDATA[I'm having trouble with ribs.  I have tried various ways of cooking them, but either they just done come out right perfect.  I make good ribs, but I want to make great ribs.

I use spares cut down to St. Louis style and cook 225-250 degrees.  The last way I have had any success is 1hr-45min of smoke, wrap in foil with apple juice 1hr-45 min (meat side down), finish 1 hour smoke.
