Achilles heal

I'm having trouble with ribs. I have tried various ways of cooking them, but either they just done come out right perfect. I make good ribs, but I want to make great ribs.

I use spares cut down to St. Louis style and cook 225-250 degrees. The last way I have had any success is 1hr-45min of smoke, wrap in foil with apple juice 1hr-45 min (meat side down), finish 1 hour smoke.

Any suggestions out there?
