I am working on SKIN...hate skin....looks good tastes like rubber.
1. First cook - low and slow and rubber
2. Second cook - 275 for 2 1/2 hours getting closer

Sticks - Any & all smoking is going to produce rubbery skin. Only a few options: Brine, finish on grill (hi heat) or another secret that cost me $300 at a Dr. BBQ class.

I was looking for recipes on canning jelly and jams and ran across a marinade for chicken thighs consisting of maple syrup and plum jelly. Shocked
Equal parts of each and into a zip lock bag over night with the thighs.
Any one ever tried this before on chicken thighs?

Maple syrup AND Plum Jelly? Shocked silent Sorry, but that just doesn't sound right. I don't like sweet flavor on my BBQ. Tart yes, but that maple syrup is against the grain.

But what the hell...If you do it, provide some pron and let us know how it turned out. If you like it, I just might give it a shot.
